For the April video in the Great Choices for Great Kids video series, Suz had the pleasure of talking to Hope Wren from Food and Nutrition Services (FNS) for Baltimore City Public Schools about their upcoming school lunch! This is FNS's own recipe for broccoli salad that they will use for City Schools lunches. Yummy!
Don't worry...we made sure to use the food scraps for our compost!
Try this easy recipe at home, too.
The recipe:
- fresh broccoli, chopped into bite-sized pieces, blanched
- low fat (lite) mayo
- low fat Italian dressing
- raisins
- red onions
- just a pinch of sugar
**Note: The original recipe for this broccoli salad is used for hundreds of students, so it's hard to shrink that down for an individual serving! Use the mayo, Italian dressing, and other ingredients in proportions that make sense for your own taste buds.
